The whole house is down with a cold this past week - which left us all in the doctor's office this morning. With confirmation that it's just a bad cold virus I got to cooking up a healthful lunch and prepping dinner, while incorporating as many cold busting superfoods as possible...and now I'm back in bed resting up per doctor's orders!
Health.com put together a great list of 20 Superfoods That Fight Colds, including oily fish, oysters, garlic, anise seeds, citrus fruits, fennel, yogurt and kefir, tea, red peppers, milk, mushrooms, skinless turkey breast, leafy greens, blueberries, dark chocolate, brazil nuts, carrots, sweet potatoes, sunflower seeds, and oats. Luckily there's no shortage of veggies in this house so I got to work....
With some pork chops on hand I decided on sautéed spinach as an accompaniment. I roasted a whole garlic bulb, sautéd onion, spinach and ginger together, and topped with garlic and tomatoes, alongside a baked pork chop.
For dinner I combined greek yogurt with some chili powder, paprika, olive oil and lemon juice, and smothered fat-trimmed chicken thighs with the mixture. Broil them for 15 minutes before baking for 15 minutes at 450 degrees. While cooking, I sliced up red, green and yellow peppers, onions and fennel, and drizzled with olive oil and mixed herbs - bake at 450 for 30 minutes. These veggies can be paired with any protein - if you have salmon on hand make use of it (mine is defrosting for tomorrow!)
FLUIDS, FLUIDS, FLUIDS
Drink tea (more benefits to Green tea if you enjoy it!) and plenty of fluids - water, water, water! Juice and soups count too. And pass on the wine for now - alcohol will only dehydrate you further. Boo hoo.
